Welcome to March! This new month excites me, and this week's recipe does too.  I try to keep up on the trends in the culinary world, not only for you but I like to try new things. I'm still eating low carb and losing weight at the right rate so when a trend is low carb it has my attention.  Even if you're not counting carbs these Chaffles (cheese waffles) are perfect for everyone.  Chaffles are made with very few ingredients, eggs for protein, a healthy flour like almond or coconut and cheese. They can be sweet or savory making them good for any meal or snack. I can't imagine a better use for my waffle iron. There are tons of recipes for chaffles online but I always go to Pinterest for the best. So, since chaffles are new to me, I'm sharing an easy recipe to start out with, from here you can advance to options.  March is starting out low carb and healthy, thanks to chaffles! 

Chaffles

1 large egg

1/2 c. shredded mozzarella cheese

1 Tbsp. coconut flour or 3 Tbsp. almond flour

1/4 t. baking powder

  • Combine the egg, mozzarella cheese, coconut flour (or almond flour), and baking powder together to form a batter. I recommend using a small blender or food processor to mix the cheese into the other ingredients well.

  • Transfer half of the batter into a mini waffle maker (or center of a standard waffle maker) and cook until edges have browned, about 3 to 5 minutes. Repeat with remaining batter. Makes 2.
