I'm craving all the Irish foods as we approach St. Patricks Day on Sunday. Aside from the regular dishes, I'm trying a new one this year. Boxty are Irish Potato pancakes, not sweet but crispy and savory. Once considered a "poor house bread" by using leftover mashed potatoes, they were a staple in Ireland in the 1700s. Today's version is served hot from the pan, with butter, sour cream or honey with chives added to enhance the flavor.
