We are pie people, and autumn is perfect for pie baking. I thought it would be fun to look up our state pie, according to Google, the Missouri state pie is Butterscotch. I've never made butterscotch from starch let alone a butterscotch pie so I'm taking this as a personal challenge and I hope you will join me in making our state pie. It calls for a single crust, so I'll make a butter crust to further enhance the flavors of this stately pie. I'm not a big fan of meringue but I'll stay true to the recipe, it may surprise me. Did you know you can buy meringue flavorings online, that would be fun to play with.
