DOWN HOME WITH SUE: Beat the heat with a refreshing homemade blueberry 'nice' cream

It was bound to catch up with us sooner or later, but fear not — I have an icy treat to help beat the heat that you just have to try!

Move over, ice cream. This creamy "nice" cream is so easy to make, a bit healthier than the normal store-bought product and you can add just about anything to the mix.

Just make sure you have a freezer-safe container (they are usually double-walled). I found one at Dollar Tree for $6. I made my first batch using blueberries, and I'm hooked.

Give this "nice" cream a try. It is so refreshing!

 

Creamy Nice Cream

• 2 cups frozen berries

• 1 cup full-fat coconut milk

• 2 tablespoons honey

• 1 teaspoon vanilla

• Pinch of salt

 

Directions:

Add all ingredients to a blender and process until completely smooth. Running the mixture through the blender breaks up the berries, resulting in a much smoother texture and helping it freeze faster!

Transfer the blended mixture into a freezer-safe container (an ice cream container works best). Freeze for 2 to 4 hours.

Allow the nice cream to sit at room temperature for 5 to 10 minutes to soften slightly before scooping and serving.
